We love making our fudge! It's traditionally produced from a recipe dating from 1830, using only the finest ingredients - which is why Jim says it's the best in the world! We have so many friends enjoying our fudge and they say there's nothing quite like it. So just how do we do it? Take a look below. Step1:
The finest fresh ingredients are placed in a traditional copper cauldron. These ingredients include natural cane sugar, fresh whipping cream, corn syrup and other items depending on the final flavour being made. |

Step 2:
The fudge ingredients are carefully mixed and cooked to a temperature of 230-240F. Then the hot liquid fudge is poured onto heavy Italian marble slabs, and other ingredients such as raisins, biscuit, chocolate or nuts are added. |

Step 3:
Then the fun starts! The fudge is handcrafted as it cools to make it creamy, by controlling the crystallisation of the sugar. This process ensures the final product has our famous ‘melt in the mouth’ texture. |

Step 4:
The skilled fudgemaker knows exactly when to start the next stage of the process. Switching tools, he carefully builds the setting fudge into a 5ft long baguette shape. |

Step 5:
Now it’s time to add any toppings, to offer our shop customers a warm free sample, and then slice the fudge into deliciously thick slices ready for sale.
Fresh fudge does not need to be refrigerated and will keep for around 10 days, or it can be frozen and will then last for many months.
