FUDGE RECIPE IDEAS FROM JIM GARRAHY’S FUDGE KITCHEN
There's so much more you can do with our fudge! Here's a collection of some fantastic recipe ideas for dishes using Jim Garrahy's delicious handmade fudge. They include desserts, drinks and ice cream toppings. We hope you enjoy them.
Caramel Fudge Bread and Butter Pudding Recipe
Recipe Ingredients:
6 slices of bread, crusts cut off
Softened butter
2 eggs
1 and half tablespoons sugar
150ml single cream
2 slices Traditional Toffee fudge, diced
Pinch of ground cinnamon
Method:
Butter the bread and layer in buttered pie dish, butter side up.
Whisk together the eggs with a tablespoon of sugar and cinnamon, add milk and cream. Pour over bread, soak for an hour. Add fudge and place in preheated oven at 140oC (Gas mark 1). Sprinkle with remaining sugar and bake for 1 ½ hours.
Fudge Ice Cream Recipe
Recipe Ingredients:
1 slice fudge, diced
1 litre double cream
6 tablespoons icing sugar
1 tablespoon instant coffee
Method:
Half whip the cream, add icing sugar then coffee. Continue to whip until mixture is just firm. Add fudge, spoon into paddle container and freeze.
Chocolate Fudge Sauce Recipe
Recipe Ingredients:
2 Slices chocolate fudge
120ml double Cream
50ml Coffee Liqueur (optional)
Method:
Bring all ingredients to boil stirring constantly.
Toffee Rice Pudding Recipe
Recipe Ingredients:
100grms Pudding Rice
350ml milk
2 slices Traditional Toffee fudge
Method:
Put all ingredients into deep oven tray and bake for 90 minutes. Stir every 15 mins.
Cappuccino Fudge Creme Brulee Recipe
Recipe Ingredients:
450ml double cream
1 Vanilla pod, split lengthways
4 egg yolks
1 tablespoon caster sugar
1 Slice cappuccino fudge, diced
Method:
Warm the cream in a saucepan with the vanilla pod. Meanwhile beat egg yolks with sugar until creamed. Pour cream over egg mixture into ramekins and place in a roasting dish half filled with water. Put 2-3 cubes of fudge into each ramekin. Bake for 40-50 minutes or until set.
When ready to serve top with Demerara sugar and caramelise under a hot grill.
Apricot Yoghurt Filo Parcels Recipe
Recipe Ingredients:
1 large slice Vanilla fudge
1 tin apricot halves
Approx 8 sheets filo pastry
Small pot of Natural Yoghurt
Method:
Place an apricot half on the corner of a filo sheet, drop dessert spoon yoghurt in the centre and top with a cube of fudge. Roll and fold into a parcel Bake at 180oC until golden brown. Serves 4 (ish).
Fresh Strawberry and Vanilla Flan Recipe
Recipe Ingredients:
Flan base
Small punnet of strawberries
2 large slices of Vanilla fudge
Method:
Quarter strawberries. Melt fudge as in fudgey fun below. Pour a small amount into base and spread. Add strawberries then pour the remaining fudge over the top. Serve as soon as firm, while still warm. Serves 4.
Fudgey Fun Recipe
Melt down fudge and spread over almost anything! Especially nice on fairy cakes, muffins, teacakes or even on a slice of bread. Use rum and raisin flavour to spice up hot cross buns, jazz up plain biscuits or cement them together. Pour over your favourite desert or ice cream, or make fudgey popcorn.
Method:
Melt fudge on a medium/low heat (defrost) in microwave for approximately 1 minute per slice, stirring gently once. It should be liquid but not bubbling. Drop on in spoonfuls and spread immediately. Quickly add any decorations before going on to the next one. If fudge sets just give it a few more seconds in the microwave and continue.
Fudge Malt Drink Recipe
This makes a fantastic pick me up or breakfast meal - its traditional ice cream parlour food in the States:
Recipe Ingredients:
6 small chunks of Vanilla fudge (about 1oz)
2 teaspoons of Horlicks
2 scoops Vanilla full cream ice cream
half a pint of milk
Method:
Put all the ingredients into a blender and whizz for thirty seconds. Pour out the thick shake into a chilled long glass, add a thick straw to suck it up. Makes 2/3 pint, so you could share it with a friend, or keep topping up your glass and scoff it all yourself!
Coffee addict? Try adding a jigger of strong expresso for a Coffee Malt - mmmm!!
Fudge Crunchies Recipe
Adding Jims fudge gives these old favourites a real touch of class.
Recipe Ingredients:
1 oz of butter
1 tablespoon of Golden Syrup
3 cups of cornflakes (or rice Krispies)
1 slice of fudge chopped up.
Method:
Melt the butter and syrup together, cool slightly, add the fudge followed by the cornflakes, just as the fudge is starting to melt.
Again you can use a variety of favourite flavours here, but we find some of the more traditional can work best. Try it with Traditional Toffee, Vintage Vanilla, or Chocolate Classic.
The Most Delectable Ice-Cream Topping in the World Recipe
For a super dooper ice-cream dessert try adding a fudge topping to a good quality vanilla ice cream.
Method:
Melt a slice of fudge either in the microwave (about 30 seconds) or in a bowl placed over a pan of boiling water. Do not add any water to it, although for that even creamier taste you could add a dribble of fresh cream. For an adult treat you can also add a variety of alcohol once the fudge has melted. About one cap full to each slice.
Once it is melted you should allow to cool for 3-5 minutes and then pour over your ice-cream. There are many combinations you can try, but here are just a few of our favourites. (Vanilla tends to be the best flavour ice-cream to use so that the flavour of the fudge carries the dessert).
- Rich Chocolate Orange Fudge and cointreau
- Rum and Raisin fudge with a nick of rum
- Likewise with our Whiskey Cream Supreme and a tot of whiskey or Baileys Irish Cream
- Rocky Road - just straight until the marshmallows are just melting
- Cherry Almond with a spot of Ameretto
- Vintage Vanilla with a drop of Peach Schnapps or Malibu
